Tripuri Pork with Bamboo Shoot tastes remarkably similar to our Burmese Pork Sibyan (ဝက်သားဆီပြန်), and it's definitely going into my regional Indian cooking menu rotation. Pork tenderloin is bhunaoed in a bed of browned, sautéed onions, enriched with the fragrant aromas of ginger-garlic paste and Serrano peppers. Once the base flavors have matured, sliced bamboo shoots are added and simmered until everything melds into a deeply savory finish.
