Masalshi

वह जो वाबर्चीखानों आदि में मिर्च-मसाले पीसने तथा इसी तरह के छोटे-मोटे काम करता हो। A person who grinds spices and does other small tasks in kitchens. I am continually learning, growing, and evolving practical knowledge of regional masale blends across the length and breadth of India. As J. Inder Singh Kalra emphasized, "If spices are the basis of Indian cooking, the blending of these spices to make a [basic] garam masala is the essence of it. Each spice in the mélange has a specific purpose to perform. It is therefore important to be good masalchi before one can become a good chef."
