Masalchi (मसालची)

वह जो वाबर्चीखानों आदि में मिर्च-मसाले पीसने तथा इसी तरह के छोटे-मोटे काम करता हो। A person who grinds spices and does other small tasks in kitchens. विभिन्नता से ही जीवन का मज़ा है। Diversity is the joy of life. Variety is the spice of life. "If spices are the basis of Indian cooking, the blending of these spices to make a [basic] garam masala is the essence of it. Each spice in the mélange has a specific purpose to perform. It is therefore important to be good masalchi before one can become a good chef." — J. Each masala blend gains its distinctiveness and uniqueness through the rotation of recipes from India-born chef-authors and heritage recipes sourced from traditional Indian cookbooks published in India.
